Tips for Cooking 100% Pasture for Life Beef
Share
Our beef comes from cattle raised entirely on pasture, certified “Pasture for Life.” This means richer flavour, firmer texture, and a unique nutritional profile. Here’s how to get the best results:
1. Mind the Marbling—But Expect Leanness
Pasture for Life beef is often leaner than grain-fed beef.
- Tip: For steaks, sear quickly over high heat, then finish gently. For tougher cuts, use slow, moist cooking methods like braising.
2. Don’t Overcook!
Grass-fed beef cooks about 30% faster than conventional beef.
- Tip: Use a thermometer—medium-rare is 55–60°C (130–140°F). Rest before slicing.
3. Marinate for Tenderness
Acidic marinades (with wine, vinegar, or citrus) help tenderise and add depth.
- Tip: Marinate for several hours, especially for less tender cuts.
4. Slice Against the Grain
This makes every bite more tender, especially for cuts like brisket or skirt steak.
5. Celebrate the Flavour
Keep seasonings simple—salt, pepper, and a little garlic or rosemary. Let the beef’s natural character shine.
6. Use Every Cut
Try slow-cooked stews, roasts, or even offal for a true nose-to-tail experience. Make bone broth for extra nutrition and zero waste.
